I love the traditional Christmas meals that we do when we go visit my in-laws in Michigan and I also love the white trashed version of a "traditional" Christmas that we celebrate in my small Oklahoma town which looks a little something like this:

And of course my momma's WORLD FAMOUS Broccoli Cheese Casserole makes an appearance at both places (because it's my signature request item and I only get this delicious dish 2 tiny times a year and no Mrs. Edwards, your granny's isn't better!);

Corn Casserole
This is the part where I should say that you must like corn to like this recipe. And who doesn't like corn?
It's so simple to make. All you will need is:
- 6 cans of corn- DRAINED
- 1 package of cream cheese
- 1 stick of butter
- 1 cup sour cream
- 1.5 cups shredded cheddar cheese
- chopped jalapenos to taste with seeds (1 if you don't like spicy; 2-3 if you do)
- salt and pepper to taste
And then you just mix it all together, place in a 9X13 dish and bake at 350 until warm. How easy is this? And of course it's totally fat free and low calorie (and I'm also a liar). The first time I made this, I didn't drain the corn so we had corn soup instead and guess what? It was STILL a hit at the dinner table.
