Apparently, I am not superwoman and will not heal any faster than they said I would.
Dang it.
And 6 weeks out, I am still not allowed to drive.
Double dang it.
While we were out, we started talking about cooking. When it comes to cooking, Amy knows her way around a kitchen. I was shocked to hear her say she never uses her crock pot. Say WHAT? This busy mom of three girls does not have any good crock pot recipes. We need to fix this immediately. Crock pot meals can be delicious and such a time saver. There's nothing sweeter than returning from a busy day and smelling a tasty dinner.
WAIT A MINUTE...
so THIS is what it's like to be the Doc...
I'm not going to pretend to be a crock pot genius, but I do have several standbys in this area. Of all the things I can make in the crock pot, there is only one that the Doc repeatedly requests. He's a picky eater, so there aren't many requests from my man.
Here is Doc's favorite crock pot dinner. Ironically, it is a soup. The Doc hates soup. Weird, huh? Let me throw you a real curve ball here... he also hates onions. Ha ha ho ho. Snuck that one in on him.
Tamale Soup
1 pound ground beef
1 onion, chopped
1 green pepper, chopped
2 T oil
1 cup frozen corn
2 cups water
2 beef bouillon cubes
1 can pinto beans (16 oz)
1 T chili powder
1 t cumin
Salt & Pepper to taste
10 tamales, shucked & quartered
(my mom uses the frozen ones but I use canned)
In a skillet, brown beef, onion & green pepper in oil until browned. In a crock pot, combine beef mixture, corn, water, and bouillon cubes. Add pinto beans, chili powder, cumin, salt and pepper. Cook on low in crock pot for 6-8 hours. About 30 minutes prior to serving, add tamale chunks and heat thoroughly. Do not cook tamales too long as they will cook apart. Serve with cornbread.
